Hilltop Brewery: Dress up or dress down

Looking for a place to have great food and a good time? OU News Bureau reporters have visited some distinctive eateries in Oakland, Macomb and Wayne counties to learn more about what these places have to offer. Reporter Zach Micklea visited Parker’s Hilltop Brewery in Clarkston and spoke with manager Eric Rimpela.

Tell me the history of Hilltop Brewery.
It opened in July 2016. It was a former racquetball court. The rooms have high ceilings and high walls because they were courts. The owners determined there was a need for a brewery in the area and a menu that would accommodate people in suits as well as people in shorts. You can be comfortable getting a prime rib dinner and comfortable coming in shorts and getting a burger.

What is unique about Hilltop as opposed to other breweries.
We have a scratch menu. Everything that comes out of the kitchen is made from scratch. The beers we serve are brewed on-site. We also have rooms for large parties. We have a lot of rehearsal dinners, anniversary dinners and graduations — any number of occasions.

Why would someone want to come to Hilltop?
The food and beer is made from scratch. The setting is always comfortable, and you will never be overdressed or underdressed.

What would you suggest someone try if it is their first time at Hilltop?
If it was a special night out, absolutely the prime rib. If they just want a fast meal, the french dip is our most popular.  We have fantastic salads. We have a fish dinner, which is our most popular seafood.

How many people work at Hilltop?
Probably about 130 people.

What do you see in the future for Hilltop?
It’s a big hit now with the community. We have free valet parking now on busy nights. We’re addressing our parking issue with the free valet.
